Harvest cake

Ingredients/Components

• sugar - 2 c
• cinnamon - 1 tsp
• vanilla - 1 tsp
• salt - 1 tsp
• chopped nuts - 1 c
• flour - 3 c
• nutmeg - 1 tsp
• baking soda - 2 tsp
• cooking oil - 1 c
• beaten eggs - 2 item
• diced apples - 4 c

How to make harvest cake:

Combine apples and sugar and let stand 1 hour. Mix together flour, cooking oil, beaten eggs, vanilla, salt, nuts, nutmeg, cinnamon and soda. Add this mixture to the apples and sugar. Put in greased and floured pan. Bake 1 hour and 15 minutes at 350°. Let cool in pan 15 minutes. Freezes very well.
