Green bean and tomato salad
Ingredients/Components
- pinch of salt - 1 item
- lemon juice - 2 Tbsp
- red wine vinegar - 2 Tbsp
- olive oil - 1/3 c
- freshly ground pepper to taste - 1 item
- chopped fresh basil - 2 Tbsp
- scallions, sliced - 4 item
- fresh green beans, trimmed and cut into 2-inch pieces
- ripe tomatoes, cut into eighths - 4 item
- Belgian endives or inner leaves of romaine lettuce - 2 item
How to make green bean and tomato salad:
Combine beans and 1/4 cup water in a 2 quart microproof casserole. Cover tightly with plastic wrap turned back slightly on 1 side. Microcook on High 4 minutes; stir. Re-cover and microcook on High 1 to 3 minutes or until crisp-tender. Rinse under cold water. Drain and chill beans.In a small bowl or glass jar, whisk or shake together oil, vinegar, lemon juice, basil, salt and pepper.
To serve: In a medium bowl, toss beans, tomatoes, scallions and dressing together. Line serving bowl with lettuce. Fill with salad.
