- lemon juice
- red wine vinegar - 2 Tbsp
- olive oil
- ground cumin - 1/2 tsp
- fresh parsley - 2 Tbsp
- red pepper flakes - 1/8 tsp
- ground coriander - 1/2 tsp
- kosher salt - 1/4 tsp
- scallions, sliced - 3 item
- red bell pepper - 1 item
- cooked black beans
- corn kernels, cooked - 2 c
- chopped mild green chili pepper - 2 Tbsp
How to make black bean and corn salad:
Dressing:1 Tbsp. olive oil2 Tbsp. red wine vinegar1 1/2 Tbsp. lemon juice1/4 tsp. kosher salt1/8 tsp. red pepper flakes1/2 tsp. ground coriander1/2 tsp. ground cumin Combine beans, corn, pepper, scallions, parsley and chilies.Whisk together the dressing ingredients in a separate bowl. Stir the dressing into the salad. Yields almost 5 cups or 5 servings.
