Ingredients/Components

  • tomato paste - 2 Tbsp
  • dried oregano - 1/2 tsp
  • garlic cloves, minced - 2 item
  • dried basil - 1/2 tsp
  • cup diced onion - 1/2 item
  • cup sliced carrots - 2/3 item
  • cups fat free chicken broth - 3 item
  • cups diced green cabbage - 2 item
  • cup diced zucchini - 1/2 item

How to make garden vegetable soup:

In a large saucepan sprayed with nonstick cooking spray, saut?© the carrot, onion and garlic over low heat until softened, about 5 minutes. Add broth, cabbage, tomato paste, basil, oregano, and salt. Bring to a boil. Lower heat and simmer, covered, about 15 minutes. Stir in zucchini and heat 3 -4 minutes.
