Ingredients/Components

  • salt - 1/2 tsp
  • flour - 1 Tbsp
  • lemon juice - 1 tsp
  • cup sugar - 3/4 item
  • can pineapple chunks drained
  • can crushed pineapple drained
  • cans mandarin oranges drained
  • egg beaten - 1 item
  • cup pineapple juice - 2/3 item
  • carton dairy whipped topping
  • cup acini di pepe tiny macaroni - 1 item
  • cup minature marshmallows - 1 item

How to make frog eye salad:

In small saucepan mix sugar, flour and salt. Stir in pineapple juice and egg. Cook over moderate heat, stirring constantly, until thickened. Add lemon juice. Set aside and cool.

Bring 6 cups water to a rapid boil in a 3 qt. saucepan. If desired, add 2 tsp. salt. Slowly add 1 cup acini di pepe. Return to rapid boil, stirring to separate. Boil for 12 minutes. Drain immediately and rinse with cold water to chill. Combine cooked mixture with acini di pepe. Cover, and place in refrigerator until chilled. Combine remaining ingredients, stir lightly. Chill atleast 1 hour.

Note:May replace pineapple chunks with 3 cut up bananas.
