  • sugar - 3/4 c
  • salt - 1/2 tsp
  • flour - 1 Tbsp
  • can crushed pineapple - 1 item
  • miniature marshmallows - 1 c
  • lemon juice - 1 tsp
  • pineapple juice - 2/3 c
  • can chunk pineapple - 1 item
  • cans Mandarin oranges - 2 item
  • egg beaten - 1 item
  • acini de pepe - 1 c
  • carton whipped dairy topping - 1 item

How to make frog eye salad:

In a small saucepan, mix sugar, flour and salt. Stir in pineapple juice and egg. Cook over moderate heat, stirring constantly until thickened. Add lemon juice and set aside to cool. Cook acini de pepe according to package directions. Combine cooked mix with acini de pepe; cover and place in refrigerator until chilled. Combine remaining ingredients; stir lightly. Chill at least 1 hour before serving. Serves 12.
