Ingredients/Components
- grated carrots - 2 c
- raisins - 1/2 c
- carton plain low-fat yogurt - 1 oz
- lettuce leaves optional - 7 item
- Equal - 8 pkg
- unsweetened crushed pineapple, drained - 1 c
How to make diabetic carrot-raisin salad:
Combine carrots, pineapple and raisins; mix well. Chill for 2 or 3 hours. Stir in yogurt. Serve on lettuce leaf, if desired. Yields 7 servings (each serving is 1/2 cup).Recipe categories: Pineapple, Salads, Tropical fruits.
