Ingredients/Components

  • cornstarch - 2 tsp
  • chopped nuts optional - 1/3 c
  • can crushed pineapple - 1 oz
  • bananas - 2 item
  • blueberries - 1/2 c
  • graham cracker crust - 1 item
  • strawberries - 1 pt
  • peaches - 3 item

How to make fresh fruit pie:

Blend cornstarch with 3 tablespoons pineapple juice drained from canned pineapple. Add remaining juice and pineapple; heat until thickened. Layer banana slices, peach slices, blueberries and strawberries, leaving some strawberries and blueberries for garnish. Pour thickened pineapple over fruit; garnish with reserved fruit and, if used, nuts. Serve cold. Makes 8 servings.

Option: Top each slice of pie with tablespoon of low-fat vanilla or lemon yogurt or whipped cream.
