  • fresh or frozen pitted tart red cherries - 4 c
  • sugar - 1 c
  • quick-cooking tapioca - 3 Tbsp
  • shredded lemon peel - 1 tsp
  • pastry for double crust pie - 1 item
  • butter or margarine - 1 Tbsp
  • salt - 1/8 tsp

How to make fresh cherry pie:

Combine cherries, sugar, tapioca, lemon peel and salt. Let stand for 20 minutes. Stir occasionally. Fill pie shell with cherry mixture. Dot with butter or margarine. Bake in 375° oven for 30 minutes or until golden brown.
