Fresh apple bread
Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- chopped pecans - 1 c
- vanilla extract - 1/2 tsp
- salt - 1/2 tsp
- soda - 1 tsp
- buttermilk
- shortening - 1/2 c
- all-purpose flour - 2 c
- ground cinnamon - 1/2 tsp
- peeled and grated apple - 1 c
How to make fresh apple bread:
Combine 1 cup sugar and shortening; cream until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine 2 cups flour, soda and salt. Combine buttermilk and vanilla. Add dry ingredients to creamed mixture alternately with buttermilk mixture, beating well after each addition. Combine pecans and 1 tablespoon of flour and stir well. Stir pecans and apple into batter. Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan. Combine 1 1/2 tablespoons sugar and cinnamon and sprinkle evenly over batter. Bake at 350° for 1 hour. Yields 1 loaf.Note: This recipe doubled makes 3 loaves and it freezes well.
