English muffins

- sugar - 2 Tbsp
- milk
- salt - 1 tsp
- flour
- vegetable oil - 1 item
- egg - 1 item
- margarine - 1/4 c
- cornmeal - 1 item
- dry yeast - 1 pkg
How to make english muffins:
Heat milk and margarine in a saucepan until very warm. In a large bowl, combine sugar, salt, yeast and 1 1/2 cups flour. Add milk and margarine mixture; beat for 2 minutes. Beat in egg and 1 cup flour. With a spoon, add 2 cups flour or enough for a stiff dough.Knead until well mixed. Place in a bowl. Let rise until double, about 1 1/2 hours. Punch down, turn out onto floured board, and cover. Let rest 15 minutes.
Put cornmeal on a plate. Roll dough 3/8-inch thick. Cut in 3-inch circles. Dip both sides in cornmeal and place on a cookie sheet. Cover; let rise about 45 minutes, until double. Brush a large skillet with salad oil and heat. When medium hot, cook dough slices for 8 minutes per side or until brown.
