English muffins
Ingredients/Components
- sugar - 2 Tbsp
- salt - 1/2 tsp
- flour - 3 c
- warm water - 1/4 c
- egg, beaten - 1 item
- oil or shortening - 3 Tbsp
- dry yeast - 1 pkg
- scalded milk - 1 c
How to make english muffins:
Mix milk, salt, sugar and shortening. Cool to lukewarm. Dissolve yeast in warm water; add beaten egg. Blend with lukewarm mixture. Add flour and knead until smooth on a floured board. Let rise in bowl until doubled. Knead. Rest 1 minute. Roll 1/4-inch thick. Cut into muffins. Place on a cookie sheet covered with 1/4 cup cornmeal; top with cornmeal. Cover and let rise until doubled. Cook on medium hot ungreased griddle for 8 to 12 minutes on each side. Cool on rack.Recipe categories: Breads, Breakfast, Yeast breads.
