Ingredients/Components
- ground beef - 2 lb
- shredded Cheddar cheese - 1 lb
- medium onion, chopped - 1 item
- cans cream of chicken soup - 4 item
- taco seasoning - 1 pkg
- cans green chiles - 4 item
- tortilla chips, plain, not flavored - 1 pkg
How to make enchilada casserole:
Brown ground beef and drain. Add taco seasoning. Set aside. Warm soup (do not add water) with onion and green chiles. Put in layers in large, deep casserole and repeat as follows: tortillas, then soup mixture, then ground beef, then Cheddar cheese. Repeat twice and end up with tortillas on top. Bake at 350° until bubbly, about 30 to 45 minutes. Serve with taco sauce and sour cream.Recipe categories: Main dish, Casseroles, Beef.
