Enchilada casserole
Ingredients/Components
- ground beef
- cans cream of mushroom soup - 2 item
- Velveeta, cubed - 1 lb
- large can evaporated milk - 1 item
- can mild enchilada sauce - 1 item
- to 1 onion, chopped - 1/2 item
- corn tortillas 12 to 15, cut into pieces - 1 pkg
How to make enchilada casserole:
Saute beef and onion together in skillet. In a large saucepan, stir together the next 4 ingredients. Heat on medium to medium- high, or until cheese is melted. In a 9 x 13-inch pan, layer tortillas, ground beef and sauce. Repeat layers twice. Cover and heat in oven at 325° for 50 to 55 minutes. Remove cover; heat for 10 minutes.
