Enchilada casserole
Ingredients/Components
- ground meat - 1 lb
- can cream of mushroom soup - 1 item
- small onion, chopped - 1 item
- corn tortillas - 1 item
- small can enchilada sauce - 1 item
- grated cheese Cheddar or Monterey Jack - 2 c
How to make enchilada casserole:
Cook meat and onion in skillet until meat is browned. Add enchilada sauce and soup. Blend well. Break corn tortillas (either soft or crisp) into several pieces and line casserole dish. Add layer of meat mixture and cheese; continue to layer tortilla, meat and cheese until you end with cheese on top. Either bake in 350° oven for about 25 minutes or cook in microwave for 5 minutes; turn and cook for 5 more minutes.Recipe categories: Main dish, Casseroles, Beef.
