Diabetic waldorf salad
Ingredients/Components
- lemon juice
- plain nonfat yogurt - 1/4 c
- lettuce leaves - 1 item
- chopped apples - 2 c
- sliced celery - 2 Tbsp
- chopped walnuts or pecans - 1 Tbsp
- seedless green grapes, halved - 1/4 c
- raisins or snipped dates - 1/4 c
- fat-free mayonnaise or salad dressing - 1/4 c
How to make diabetic waldorf salad:
Toss together apples and lemon juice in medium-size bowl. Stir in raisins, grapes and celery.To make dressing, stir together mayonnaise and yogurt in small bowl. Fold into apple mixture. Cover and chill for 2 to 24 hours.
To serve, arrange lettuce leaves on 4 salad plates. Divide salad among plates and sprinkle each with chopped nuts. Makes 4 servings.
Per Serving: 99 calories, 1 gm Fat, less than 1 mg Cholesterol and 206 mg Sodium.
