Cucumber relish
Ingredients/Components
- sugar - 5 c
- salt - 1/4 c
- vinegar - 3 c
- celery seed - 2 Tbsp
- mustard seed - 2 Tbsp
- green peppers - 2 item
- turmeric - 2 tsp
- onions - 1 c
- cucumbers - 5 c
- red peppers - 2 item
How to make cucumber relish:
Grind cucumbers, onions, green peppers and red peppers. Add salt. Cover with boiling water and let stand overnight. Next morning, drain very well. Rinse and drain very well again. Prepare the following and bring to a boil: sugar, vinegar, mustard seed, celery seed and turmeric. Add drained vegetables and boil 15 minutes. Make a paste of 3 tablespoons cornstarch and 2 tablespoons cold water. Add to hot relish and cook 3 to 5 minutes longer.
