Crunchy lemon squares
Ingredients/Components
- chopped pecans - 1/2 c
- flour - 1 c
- baking powder - 1 tsp
- lemon juice - 1/2 c
- can Eagle Brand sweetened condensed milk - 1 item
- margarine or butter, melted - 1/2 c
- firmly packed light brown sugar - 1/2 c
- quick oats uncooked - 1 c
How to make crunchy lemon squares:
Preheat oven to 350°. In medium bowl combine oats, flour, nuts, sugar, baking powder and butter; stir to form a crumbly mixture. Set aside. In medium bowl combine sweetened condensed milk and lemon juice. Pat 1/2 the crumb mixture evenly on bottom of 9 x 9-inch baking pan. Spread sweetened condensed milk mixture on top and sprinkle with remaining crumbs. Bake 25 to 30 minutes or until lightly browned. Cool thoroughly before cutting. Loosely cover any leftovers.
