Crispy coconut-oatmeal cookies
Ingredients/Components
- sugar - 1 c
- vanilla extract - 1 tsp
- salt - 1/2 tsp
- flaked coconut - 1 c
- baking powder - 1/2 tsp
- baking soda - 1 tsp
- shortening - 1 c
- all-purpose flour - 2 c
- large eggs - 2 item
- brown sugar, firmly packed - 1 c
- crisp rice cereal - 2 c
- regular oats uncooked - 2 c
How to make crispy coconut-oatmeal cookies:
Beat shortening and sugars at medium speed with an electric mixer until blended. Add eggs and vanilla, beating well. Combine flour and the next 3 ingredients; add to shortening mixture, mixing well. Stir in oats and remaining ingredients. Shape into 1-inch balls; place 2 inches apart on lightly greased cookie sheets. Flatten slightly with fork. Bake at 350° for 12 minutes.
