Crispy coconut-oatmeal cookies
Ingredients/Components
- sugar - 1 c
- firmly packed brown sugar - 1 c
- shortening - 1 c
- large eggs - 2 item
- vanilla - 1 tsp
- all-purpose flour - 2 c
- baking soda - 1 tsp
- baking powder - 1/2 tsp
- salt - 1/2 tsp
- regular oats uncooked - 2 c
- crisp rice cereal - 2 c
- flaked coconut - 1 c
How to make crispy coconut-oatmeal cookies:
Beat shortening and sugars at medium speed of electric mixer until blended; add eggs and vanilla, beating well. Combine flour, soda, baking powder and salt; add to creamed mixture, mixing well. Stir in oats and remaining ingredients. Shape into 1-inch balls and place 2 inches apart on a lightly greased cookie sheet. Flatten slightly with fork. Bake at 350° for 12 minutes.
