Ingredients/Components

  • sugar - 5 c
  • salt - 4 Tbsp
  • cornstarch - 2 Tbsp
  • dry mustard - 1 Tbsp
  • chopped onion - 4 c
  • black pepper - 1 Tbsp
  • green pepper, chopped - 1 item
  • white vinegar
  • turmeric - 1 Tbsp
  • red pepper, chopped - 1 item
  • chopped, peeled zucchini - 10 c

How to make zucchini relish:

Mix zucchini, onion, peppers and salt. Cover with water and let stand overnight. Drain.

Mix other ingredients and add to zucchini mixture. Bring to a boil and boil slowly for 10 minutes. Seal in sterilized jars. Process 5 minutes in boiling water bath canner.
