  • sugar - 2 Tbsp
  • vanilla extract - 1/2 tsp
  • large egg - 1 item
  • dash of ground cinnamon - 1 item
  • reduced-calorie margarine - 1 Tbsp
  • cooked rice
  • golden raisins - 1/2 c
  • skim milk, divided - 2 c
  • packets Sweet One - 4 item

How to make creamy rice pudding:

In medium-size saucepan over medium heat, combine rice, 1 1/2 cups milk, sugar and Sweet One. Cook, stirring occasionally, 15 to 20 minutes or until thick and slightly creamy. Beat remaining 1/2 cup milk and egg; stir into rice mixture. Stir in raisins. Without letting mixture boil, continue cooking 2 minutes. Stir in margarine and vanilla. (Mixture will thicken on standing.) Transfer to serving bowl; sprinkle with cinnamon. Serve warm or cover with plastic wrap and refrigerate. Makes 8 (1/2 cup) servings. Calories: 120 per 1/2 cup.
