- sugar - 1/2 c
- milk - 1/4 c
- salt - 1/4 tsp
- flour
- butter - 1/4 c
- cornstarch - 1 Tbsp
- baking powder
- egg - 1 item
- cranberries - 1/2 c
- sliced peaches - 3 c
- cranberry juice - 1 c
How to make cranberry peach cobbler:
Cobbler Topping:1 c. flour2 Tbsp. sugar1 1/2 tsp. baking powder1/4 tsp. salt1/4 c. butter1 egg1/4 c. milk Mix flour, 2 tablespoons sugar, baking powder and salt. Cut in butter until crumbly. Combine milk and egg. Mix until just moistened. Set aside.In a saucepan combine 1/2 cup sugar and cornstarch. Stir in juice; cook and stir until thickened and bubbly. Stir in peaches and cranberries. Cook, uncovered, until cranberries pop, about 5 minutes. Turn into a 1 1/2-quart casserole. Immediately spoon topper into 8 mounds atop hot fruit. Bake, uncovered, at 400° for 20 to 25 minutes. Serve warm with vanilla ice cream.
