Ingredients/Components

  • salt - 1 tsp
  • egg, slightly beaten - 1 item
  • pepper - 1/2 tsp
  • lean ground beef - 1 lb
  • small onion, diced - 1/2 c
  • can whole cranberry sauce - 1 oz
  • crushed saltine crackers - 1/2 c
  • cooked rice or noodles - 1 item
  • can cream of tomato soup, undiluted - 1 3/4

How to make cranberry meatballs:

In a mixing bowl, combine first six ingredients. Shape into 1 1/2-inch balls. Place on a rack in a baking pan. Bake at 400° for 20 minutes.

Meanwhile, combine cranberry sauce and tomato soup. Heat through. Add meatballs and simmer 10 minutes. Serve with rice or noodles. May also be used as an appetizer. Yields 4 servings.
