Cranberry meatballs
Ingredients/Components
- salt - 1 tsp
- egg, slightly beaten - 1 item
- pepper - 1/2 tsp
- lean ground beef - 1 lb
- small onion, diced - 1/2 c
- can whole cranberry sauce - 1 oz
- crushed saltine crackers - 1/2 c
- cooked rice or noodles - 1 item
- can cream of tomato soup, undiluted - 1 3/4
How to make cranberry meatballs:
In a mixing bowl, combine first six ingredients. Shape into 1 1/2-inch balls. Place on a rack in a baking pan. Bake at 400° for 20 minutes.Meanwhile, combine cranberry sauce and tomato soup. Heat through. Add meatballs and simmer 10 minutes. Serve with rice or noodles. May also be used as an appetizer. Yields 4 servings.
