Cranberry crunch
Ingredients/Components
- sugar - 1 c
- jar orange marmalade - 1 oz
- coarsely chopped pecans - 1 c
- bag fresh cranberries - 1 (12
- grated rind or 1 orange optional
- crystallized ginger, cut into long slivers - 4 oz
How to make cranberry crunch:
Place berries in long, flat Pyrex casserole dish and sprinkle the sugar on top. Seal with foil and cook in 350° oven for approximately 25 minutes (berries should pop open when done). Stir to dissolve sugar. Stir in marmalade, ginger and nuts while berries are hot. Makes approximately 1 quart.Great with turkey, pork and chicken!
