Cranberry compote
Ingredients/Components
- sugar - 1/2 c
- water - 1/2 c
- Amaretto liqueur - 1/4 c
- honey - 1 c
- fresh lemon juice - 1 Tbsp
- cranberries - 12 oz
- grated lemon zest - 1 Tbsp
- minced fresh ginger - 2 tsp
- pears, peeled, cored and diced - 2 item
- diced dried apricots - 1/2 c
- diced pitted prunes - 1 c
How to make cranberry compote:
Place water and sugar in a medium saucepan and heat over medium-high heat until sugar is dissolved, 3 to 4 minutes. Stir in the pears and cranberries and cook until the cranberries just begin to pop, about 5 minutes. Remove from heat.Stir in all remaining ingredients and let cool to room temperature, stirring occasionally. Store in refrigerator until ready to use.
