Ingredients/Components
- white wine - 1 item
- coarse ground black pepper - 1 item
- fresh ginger root - 1 Tbsp
- can chicken stock - 1 item
- hens - 1 item
- to 4 chopped garlic cloves - 3 item
- garlic powder or seasoned salt with rosemary and basil - 1 item
How to make cornish game hens:
Rinse birds; rub with black pepper and garlic powder or seasoned salt with rosemary and basil. Put 1/2 cloves and ginger in cavity of birds. Place birds in rack inside iron skillet or heavy pan. (I like birds crisp, so I cook them above sauce; Teflon rack is ideal.)Sauce: Use chicken stock, wine wine (not necessary for all non-drinkers), other 1/2 garlic and ginger. Mix and place in pan under birds. Cook birds at 375° to 400° for 1 hour or until liquid is clear when you pierce bird with fork. Baste often with sauce in pan.
