Glazed cornish hens



  • salt - 2 tsp
  • brown sugar, firmly packed - 1/4 c
  • ground cloves - 1/4 tsp
  • grated orange rind - 1 tsp
  • white wine - 1 c
  • dried apricot halves - 1 c
  • hens - 6 item
  • crumbled rosemary, Bells seasoning or both - 2 tsp
  • applesauce or apricot preserves - 1 c

How to make glazed cornish hens:

Sprinkle hens inside and out with salt and rosemary. Roast in a 350° oven for 1 hour. While hens are roasting, chop apricots; add to applesauce and wine in medium saucepan. Stir in orange rind, brown sugar and ground cloves. Simmer for about 30 minutes, until apricots are tender. Spoon glaze over hens; roast 30 minutes longer.
