Ingredients/Components

  • sugar - 3/4 c
  • salt - 1 tsp
  • vinegar - 1/4 c
  • salad oil - 1/2 c
  • dry mustard - 1/4 tsp
  • Worcestershire sauce - 1 tsp
  • carrots - 2 lb
  • green pepper, sliced - 1 item
  • can condensed tomato soup - 1 item
  • small onions, sliced - 3 item

How to make copper pennies:

Slice carrots. Place in a saucepan and cover with water. Simmer until just tender. Drain. Transfer to a glass bowl, add sliced onions and green peppers. Mix remaining ingredients together and pour over the vegetables. Cover and marinate overnight. Serve cold.
