  • flaked coconut - 14 oz
  • box chocolate cake mix - 1 item
  • tub Cool Whip, thawed - 1 (8

How to make coconut snowballs:

Prepare cake mix as directed. Spoon into 18 paper-lined muffin cups. Bake 20 minutes. Cool completely. Remove paper liners. Spread Cool Whip on bottom and sides of cupcakes. Press coconut into whipped topping. Place cupcakes, top sides down, on serving plate. Refrigerate until ready to serve. Makes 18 snowballs.

To tint snowballs: Before pressing coconut into whipped topping, put coconut into glass with a few drops of food coloring and toss with a fork, then apply to whipped topping.

Idea: For Christmas, use red and green coloring.
