  • sugar - 10 Tbsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • milk - 3/8 c
  • salt - 1/4 tsp
  • flour - 1 c
  • butter - 5 Tbsp
  • coconut - 1 c
  • baking powder
  • white powdered sugar - 1 c

How to make coconut meringue cake:

Cream butter with sugar, add 3 egg yolks and beat. Add vanilla. Sift flour, salt and baking powder. Beat 3 egg whites until firm, add 1 cup powdered sugar, fold in 1 cup coconut. Pour cake batter in greased and floured Pyrex pan. Spread meringue on top and bake at 325° until well done or toothpick comes out clean.
