Coconut meringue pie
Ingredients/Components
- sugar - 3/4 c
- vanilla - 1 tsp
- milk - 2 c
- salt - 1/4 tsp
- flour - 4 Tbsp
- butter - 2 Tbsp
- egg yolks - 3 item
- coconut
How to make coconut meringue pie:
Combine sugar, flour and salt. Gradually stir in milk. Cook over medium heat, stirring constantly until mixture thickens. Cook for 2 minutes longer. Remove from heat. Stir small amount of hot mixture into egg yolks. Return to hot mixture. Cook 2 minutes. Remove from heat; add 1 cup coconut, butter and vanilla. Pour into pie crust.Beat egg whites until stiff. Add sugar; beat until stiff peaks. Spread over pie in crust. Sprinkle with 1/2 cup coconut. Brown in oven at 325°.
