Ingredients/Components

  • sugar - 1 c
  • vanilla - 1 tsp
  • salt - 1 tsp
  • evaporated milk - 1 c
  • baking powder - 1 Tbsp
  • all-purpose flour - 3 c
  • egg, well beaten - 1 item
  • sugar for sprinkling - 1 item
  • unsalted butter, melted and cooled - 4 oz
  • finely grated fresh coconut - 2 c

How to make coconut bread:

Sift the flour, baking powder and salt together. Mix in the sugar and coconut. Add the egg, milk, vanilla and butter. Mix lightly but thoroughly. Divide the mixture between 2 greased 9 x 5-inch loaf pans. Fill each about 2/3 full. Sprinkle with sugar and bake in a 350° oven for about 55 minutes or until a cake tester comes out clean. Let loaves cool partially in pans. Then turn out on cake rack.
