Coconut bread
Ingredients/Components
- sugar - 1 c
- vanilla - 1 tsp
- salt - 1 tsp
- evaporated milk - 1 c
- baking powder - 1 Tbsp
- all-purpose flour - 3 c
- egg, well beaten - 1 item
- sugar for sprinkling - 1 item
- unsalted butter, melted and cooled - 4 oz
- finely grated fresh coconut - 2 c
How to make coconut bread:
Sift the flour, baking powder and salt together. Mix in the sugar and coconut. Add the egg, milk, vanilla and butter. Mix lightly but thoroughly. Divide the mixture between 2 greased 9 x 5-inch loaf pans. Fill each about 2/3 full. Sprinkle with sugar and bake in a 350° oven for about 55 minutes or until a cake tester comes out clean.
