  • sugar - 1/4 c
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour - 2 c
  • eggs, beaten - 3 item
  • baking powder - 2 tsp
  • walnuts - 1 c
  • candied cherries - 1/4 lb
  • candied pineapple - 1/4 lb
  • water or juice - 1/4 c
  • Brazil nuts - 1 lb
  • dates, chunked or raisins - 1 lb

How to make christmas cake:

This is not a traditional fruitcake! Even people who hate fruitcake love this one.

Mix liquids; add dry ingredients and mix well. Add fruit and nuts. Bake at 325° at least an hour in a greased and floured angel food cake pan. Test with a toothpick.
