Ingredients/Components
- sugar - 3 c
- eggs - 4 item
- vanilla - 1 tsp
- milk - 1/4 c
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 3 c
- brown sugar
- butter - 1/2 c
- oil
- soda - 1 tsp
- confectioners sugar
- baking powder
- grated zucchini - 3 c
- chocolate - 3 sq
How to make chocolate zucchini cake:
Icing:1 c. brown sugar1/2 c. butter1/4 c. milk1 3/4 c. confectioners sugar1 tsp. vanilla Melt chocolate and cool. Add oil; beat eggs and sugar. Mix all ingredients together. Bake in three 9-inch layers for 25 to 35 minutes at 350°.Caramel Icing: Melt butter in pan. Add sugar; boil 2 minutes. Stir in milk and let come to a boil. Remove from heat and let cool. Cream in confectioners sugar. Add vanilla.
To double icing for layer cake, must make two batches.
Cake can be baked in Bundt pan for 1 1/4 hours at 350°.
