Ingredients/Components

  • sugar - 3 Tbsp
  • salt - 2 tsp
  • toasted almonds - 1/2 c
  • lemon juice - 1 tsp
  • white pepper - 1/4 tsp
  • chopped scallions - 3 item
  • toasted sesame seed - 3 Tbsp
  • sesame oil - 1/4 c
  • sliced celery - 3/4 c
  • head shredded lettuce - 1 item
  • rice stick noodles - 1/3 lb
  • rice wine vinegar - 7 Tbsp
  • cooked chicken breasts - 2 item
  • 5-spice - 1/2 tsp
  • small sliced cucumber - 1 item

How to make chinese chicken salad:

Break apart rice noodles and deep fry in 2 to 3-inches hot vegetable or soy oil, above 350°. Noodles will fry within seconds and will be white and crisp when done. Larger quantities may be fried in batches. Drain and set aside.

Mix dressing (last six ingredients). Shake well and set aside. Shred chicken breasts. Mix 1 or 2 tablespoons of dressing with chicken and set aside.

Just before serving, lightly mix fried rice noodles, vegetables, sesame seed and nuts. Then pour over dressing.
