  • sugar
  • salt - 1 tsp
  • sliced almonds - 3 4
  • salad oil - 1/8 c
  • sesame seed - 2 3
  • black pepper - 1/2 tsp
  • sesame oil - 2 Tbsp
  • white vinegar - 3 Tbsp
  • head lettuce - 1 item
  • to 3 chopped green onions - 2 item
  • chicken approximately 2 to 3 chicken breasts - 1/2 lb
  • deep fried maifun rice noodles or La Choy rice noodles - 2 oz
  • ajinomoto monosodium glutamate - 1 tsp

How to make chinese chicken salad:

Dressing:2 Tbsp. sugar1 tsp. salt1 tsp. ajinomoto (monosodium glutamate)1/2 tsp. black pepper1/8 c. salad oil3 Tbsp. white vinegar2 Tbsp. sesame oil Mix dressing ingredients together and shake thoroughly.

Cook or steam chicken. Shred and set aside. Take a small portion of maifun and deep fry. Experiment with a few strands. It only takes a second to puff up. Use as much as you want in your salad. (Ready to use La Choy rice noodles may be substituted for the maifun.) Shred the lettuce into bite size pieces.

Mix the lettuce, chicken and maifun in a large salad bowl. Garnish with sliced almonds, sesame seed and chopped green onions. Pour on dressing and toss just before serving.

If more dressing is desired, the dressing recipe can be doubled.
