  • sugar - 3/4 c
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour
  • cornstarch - 1/4 c
  • water - 1 Tbsp
  • almond extract - 2 tsp
  • baking powder - 1 tsp
  • egg - 1 item
  • margarine - 1/4 c
  • light corn syrup - 1/4 c
  • egg yolk - 1 item
  • corn oil - 2/3 c
  • whole blanched almonds - 1/3 c

How to make chinese almond cookies:

Stir together flour, cornstarch, baking powder and salt. At medium speed, beat margarine until softened. Gradually add sugar and corn syrup; beat until mixed. Beat in egg. In a measuring cup, stir together corn oil and extracts. Gradually add to egg mixture, beating until mixed. Add flour mixture, beating until smooth. Shape into 1-inch balls. Place 2 inches apart on cookie sheets. Place almond in center of each. Flatten with bottom of glass. Brush lightly with egg yolk mixed with water. Bake at 350° for 10 to 12 minutes or until lightly browned. Cool on rack.
