Chinese almond cookies
Ingredients/Components
- sugar - 3/4 c
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour
- cornstarch - 1/4 c
- water - 1 Tbsp
- almond extract - 2 tsp
- baking powder - 1 tsp
- egg - 1 item
- margarine - 1/4 c
- light corn syrup - 1/4 c
- egg yolk - 1 item
- corn oil - 2/3 c
- whole blanched almonds - 1/3 c
How to make chinese almond cookies:
Stir together flour, cornstarch, baking powder and salt. At medium speed, beat margarine until softened. Gradually add sugar and corn syrup; beat until mixed. Beat in egg. In a measuring cup, stir together corn oil and extracts. Gradually add to egg mixture, beating until mixed. Add flour mixture, beating until smooth. Shape into 1-inch balls. Place 2 inches apart on cookie sheets. Place almond in center of each. Flatten with bottom of glass. Brush lightly with egg yolk mixed with water.
