  • sugar - 3/4 c
  • almond extract - 1 tsp
  • baking powder - 1/2 tsp
  • sifted flour - 2 c
  • ground almonds - 1/2 c
  • whole blanched almonds - 1 item
  • butter can use half margarine - 1 c

How to make chinese almond cookies:

Absolutely delicious! Everyone loves these rich, crisp cookies.

Cream butter thoroughly. Add sugar gradually. Beat until light and fluffy. Add extract. Sift together flour and baking powder. Gradually add to creamed mixture. Blend in ground almonds. Shape into balls using a level tablespoon for each. Roll in granulated sugar. Place on baking sheet and press flat with glass bottom. Top each with whole almond. Bake at 375° for 10 to 12 minutes. Remove to wire rack and cool. Makes about 3 1/2 dozen.
