Ingredients/Components
- sugar - 1/2 c
- eggs - 2 item
- vanilla - 1 tsp
- pkg - 2 oz
- vanilla wafers - 1 item
- canned pie filling* - 1 item
How to make cheesecake cupcakes:
Preheat oven to 350°. In electric mixer, beat cream cheese, eggs, sugar and vanilla until light and fluffy. Place 1 cookie in each of 18 foil baking cups on cookie sheet. Pour cream cheese mixture into cups, filling about 1/2 way. Bake at 350° for 15 to 18 minutes. Cool thoroughly. Top with desired fruit (*canned cherry, blueberry, pineapple or strawberry pie filling). Refrigerate. Makes 18 individual cupcakes.Recipe categories: Desserts, Cakes, Cupcakes.
