Cauliflower salad
Ingredients/Components
- sour cream - 1 Tbsp
- lemon juice - 1 tsp
- Dijon mustard - 1 tsp
- salt and pepper - 1 item
- lettuce - 1 item
- finely chopped celery - 1/2 c
- mayo - 1/3 c
- chopped shallots - 1/4 c
- frozen peas, thawed - 1 c
- tomatoes, cut in wedges - 2 item
- large cauliflower - 1 item
How to make cauliflower salad:
Break cauliflower into flowerets and rinse well. Cook to crisp-tender stage; do not overcook. Drain and add celery, shallots and thawed peas.Blend mayo, lemon juice, mustard and sour cream; toss with cauliflower. Season with salt and pepper. Serve on bed of lettuce and garnish with tomato wedges.
