Ingredients/Components

  • sugar - 1 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • soda - 1 tsp
  • baking powder - 1 tsp
  • all-purpose flour
  • salad oil - 2/3 c
  • ground cinnamon - 1 tsp
  • shredded carrot - 1 c
  • crushed pineapple with syrup - 1/2 c

How to make carrot pineapple cake:

Sift together into large mixing bowl the flour, sugar, baking powder, soda, cinnamon and salt. Add oil, eggs, carrot, pineapple (with syrup) and vanilla. Mix until moistened; beat 2 minutes at medium speed on electric mixer. Bake in greased and lightly floured 9 x 9 x 2-inch pan in 350° oven about 35 minutes or until done. Cool 10 minutes. Remove from pan. Cool. Frost with a cream cheese frosting.
