Ingredients/Components

  • sour cream - 1 c
  • egg - 1 item
  • Bisquick - 2 c
  • artificial sweetener - 6 Tbsp
  • fresh blueberries - 1 c
  • lemon peel, grated - 1 item

How to make blueberry muffins:

Preheat oven to 425°. Combine Bisquick and 3/4 cup artificial sweetener. Make a well in center of mixture and add sour cream and egg all at once. Beat with a fork until well combined. Gently fold in blueberries. Put 1/4 cup of batter in each muffin cup.

In small bowl, combine lemon peel and 2 tablespoons artificial sweetener. Sprinkle over batter in each cup. Bake 20 to 25 minutes or until golden brown. Serve hot. Serves 12 muffins. Exchange Per Serving: 1 bread and 1 fat.
