  • sugar - 2 c
  • eggs - 4 item
  • vanilla - 1 tsp
  • grated carrots - 3 c
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • vegetable oil
  • all-purpose flour - 2 c
  • ground cinnamon - 2 tsp
  • cream cheese, softened - 8 oz
  • Grease and flour 13 x 9-inch baking pan
  • coarsely chopped pecans and walnuts - 1 c

How to make carrot cake with cream cheese frosting:

Preheat oven to 350°. Grease and flour 13 x 9-inch baking pan. Beat eggs and oil in small bowl. Combine flour, sugar, baking soda, baking powder and cinnamon in large bowl. Add egg mixture; mix softly. Stir in carrots and nuts. Do not overmix. Pour into prepared pan. Bake 30 to 35 minutes. Cool. Spread with Cream Cheese Frosting.Cream Cheese Frosting:16 oz. powdered sugar8 oz. cream cheese, softened1/2 c. butter, softened1 tsp. vanilla Beat until smooth.
