Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla - 1 tsp
- pkg
- stick margarine - 1 item
- egg yolks - 4 item
- soda - 1 tsp
- self-rising flour - 2 c
- egg whites, stiffly beaten - 4 item
- box powdered sugar - 1 item
- Wesson oil - 1 c
- pecans, chopped - 1 c
- large jars carrots baby food - 2 item
How to make carrot cake:
Icing:1 (8 oz.) pkg. cream cheese1 stick margarine1 box powdered sugar1 tsp. vanilla1 c. pecans, chopped Mix sugar, flour, soda and cinnamon. Add egg yolks, one at a time, to dry mixture. Beat well. Add oil, egg whites and carrots. Mix well. Bake at 325° for 25 minutes. Makes 3 layers.Icing: Mix well and spread on cooled cake layers.
