- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- chopped pecans - 1 c

- stick margarine - 1 item
- grated carrots - 3 c
- baking soda - 1 tsp
- vegetable oil
- self-rising flour
- box powdered sugar - 1 item
How to make carrot cake:
Icing:1 (8 oz.) pkg. cream cheese1 stick margarine1 c. chopped pecans1 box powdered sugar1 tsp. vanilla Cake: Mix sugar and oil; add eggs, one at a time. Add vanilla. Sift together flour, soda and cinnamon; add to mixture. Fold in carrots. Preheat oven to 350°. Line 3 or 4 cake pans with wax paper after they have been greased. Bake 30 minutes. Cool before icing.Icing: Combine all ingredients and mix well. Ice cooled cake.
