  • sugar - 1/3 c
  • vanilla - 1 tsp
  • milk - 2 c
  • flour - 1/4 c
  • cream of tartar - 1/4 tsp
  • can evaporated milk - 1 item
  • sugar, divided - 2 c
  • egg yolks save whites for meringue - 6 item
  • 8 or 9-inch pie crusts - 2 item

How to make caramel pie:

Caramel Pie Meringue:6 egg whites1/4 tsp. cream of tartar1 tsp. vanilla1/3 c. sugar Preheat oven to 350°. Lightly brown pie crusts. In iron skillet or any heavy pan, melt 1 cup sugar at a medium to high temperature, stirring occasionally at first, then continuously as it melts. While sugar is melting, mix together the rest of the sugar, evaporated milk, milk, flour, egg yolks and vanilla. When sugar is completely melted and is light golden in color, add milk mixture to pan, stirring constantly. The caramelized sugar will harden at first, but will re-melt as the mixture cooks. When the mixture is as thick as pudding, remove from heat and pour into the prepared pie crusts. Top with meringue and bake until the meringue is a golden brown. Remove from oven and cool.

Caramel Pie Meringue: In mixing bowl, beat together egg whites, cream of tartar and sugar. Beat on high until egg mixture is stiff and when a knife is run through it, it stays standing. Add sugar and beat for a couple more minutes. This will make enough meringue for 2 pies. Brown the meringue on top of pie in a 350° oven until it is a golden brown.
