Ingredients/Components

  • sugar - 2/3 c
  • vanilla - 1 tsp
  • butter - 1/4 c
  • evaporated milk - 2/3 c
  • confectioners sugar - 3 Tbsp
  • unsweetened chocolate
  • whipping cream - 1/2 pt
  • coffee ice cream
  • drops almond extract - 3 item
  • chopped pecans optional - 1/2 1
  • to 24 Oreo cookies, crushed - 18 item

How to make calypso pie:

Sauce:2 sq. unsweetened chocolate1/4 c. butter2/3 c. sugar2/3 c. evaporated milk1 tsp. vanilla3 drops almond extract Filling:1 qt. coffee ice cream1/2 pt. whipping cream3 Tbsp. confectioners sugar1/2 to 1 c. chopped pecans (optional) Grease a 9 x 13-inch pan. Crush cookies; add melted butter. Put in pan. Freeze. Add softened ice cream; freeze. Melt chocolate and butter. Add sugar, etc. and cook until soft thickening. Pour over ice cream and freeze. Whip cream and confectioners sugar and spread over sauce. Sprinkle nuts over whipped cream; freeze. Serve frozen.
