Ingredients/Components

  • oil - 1 oz
  • vinegar - 1 oz
  • pepper to taste - 1 item
  • medium head cabbage - 1 item

How to make cabbage salad:

Shred cabbage as if for cole slaw. (Do this the night before you plan to eat the salad.) In a large bowl, put 1/5 cabbage layered with 1 tablespoon salt. Continue to layer cabbage and salt 5 times until all cabbage is gone. Cover with a clean dish towel; leave on counter overnight.

In the morning, take 2 handfuls of cabbage and squeeze hard until all water runs out and cabbage is limp. Repeat with all cabbage. Toss with oil and vinegar. Season with black pepper and refrigerate.
