  • sugar - 3 c
  • vanilla - 1 tsp
  • salt - 1 tsp
  • cornstarch - 6 Tbsp
  • eggs, separated - 6 item
  • buttermilk - 1 c
  • baking soda - 1/2 tsp
  • grated lemon rind - 1 Tbsp
  • plus 2 Tbsp
  • fresh lemon juice - 2 tsp
  • solid shortening - 1 c

How to make buttermilk cake:

Grease and flour angel food cake pan. Beat together shortening and sugar in large bowl with electric mixer at medium speed. Add salt, vanilla, lemon juice and lemon rind. Beat until fluffy. Add egg yolks and beat well. Set aside. Place flour in large bowl. Add cornstarch. Set aside.

Combine baking soda and buttermilk in small bowl; mix well. Add flour and buttermilk alternately to sugar mixture. Mix well. Beat egg whites until stiff and fold into sugar mixture. Pour into prepared pan. Bake for 1 hour and 15 minutes. Invert over plate and cool. Remove from tube pan when cool.

Cake is good plain or slice and top with warm lemon sauce or strawberry sauce.
